Tasting notes: A pale salmon colour with a fine stream of bubbles, the aromas are intensely fruity, for a sparkling rosé. Red fruits leap out of the glass, suggesting morello cherries, strawberry and redcurrant, with a touch of buttery pastry. The palate is rich and again very fruit forward with raspberry and red fruits dominating.

Winemakers notes: The grapes were harvested from our Portscatho vineyard in with superb ripeness. The grapes were whole bunch pressed and cool fermented, the Pinot Noir Précoce in stainless steel tank, the Chardonnay and Riesling in 3rd fill french oak barrels. The base wines were blended and bottled in August 2015 where the bottles underwent secondary fermentation in bottle. Following this the wines were aged for just over 3 years, disgorged and aged for a further 6 months minimum on cork.
