Tasting Notes: A distinct, full bodied and expressive style of sparkling. Light gold in colour, with a fine stream of persistent bubbles. The aroma is pronounced, full of apricots and buttery almond croissants are at the fore. The palate is rich for a sparkling due to the oak, full of citrus, butter and candied peel. 

Winemaker's Notes: This Blanc de blancs is a blend of the best Chardonnay and Pinot blanc from 2015. What makes this a slightly different sparkling from our usual, is that all of the wine used was fermented and aged in oak before being blended. This results in a wine with more body, texture and more tropical notes than a typical Blanc de Blancs. The wine underwent secondary ferment in bottle and was then aged for a minimum of 4 and a half years before release.
