Tasting Notes: Pale lemon in colour with a fine mousse, this wine has a beautiful combination of sweet and savoury characters. Aromas are bright and clean with plenty of apple, lemon rind and toasty bread coming through due to the extended bottle aging. On the palate, the wine is direct and precise with crisp citrus and green apple flavours with a lingering biscuity finish.
Winemaker’s Notes: Made from the finest parcels Chardonnay from 2017. Whole bunch pressed and cool fermented 100% in stainless steel to maintain fruit and purity of the 2017 vintage. The base blend was bottled where it underwent secondary fermentation in bottle April 2018. This was then aged on the yeast lees for over 6 years before being disgorged. Dosage was kept low at only 6g/l to highlight the fantastic precise sparkling wine year that was 2017.
