Tasting notes: An experimental tiny batch made in the style of a German Riesling by stopping the ferment through chilling. This results in an off-dry style where the sweetness is perfectly balanced by the grapes naturally high acidity. This wine displays restrained apple and floral characters on the nose. The palate is delicate initially with a little sweetness that develops in to crisp citrus flavours and a long refreshing finish.
Winemakers notes: English grown Riesling harvested super ripe with perfect sugar and acidity balance. Typically such a small amount we would usually blend this away but being a favourite variety of mine we once again kept this batch separate. This was fermented cool using wild yeast, the fermentation was long and slow taking 3 months. This was followed by ageing in stainless steel tanks until the wine had softened sufficiently, before being bottled.
