Merlot Cabernet Sauvignon 2024
Tasting Notes: Garnet in colour, this wine displays aromas of stewed red fruits, spice and a subtle hint of liquorice. The palate offers surprising body, leading with bright red fruits, spice and then pepper. The finish is long and savoury.
Winemaker's Notes: A small amount of Merlot and Cabernet Sauvignon are grown under cover, as neither can ripen sufficiently outside in the British climate. Only 2 barrels were made. The grapes were crushed and fermented on the skins. Manual punch downs were performed daily through the ferment to gently extract colour and body. After a month on skins, the wine was racked in to barrel where it remained for just under a year. The wine was bottled without fining or filtration, 870 bottles produced.
