Food Pairing: Excellent with smoked salmon and capers.
Tasting Notes: A very pale copper salmon hue with a fine stream of tiny bubbles. The nose shows incredible delicate complexity, with soft aromas of raspberry, strawberry and buttery pastry. The palate is crisp, with fresh citrus and red fruit flavours that linger providing a long creamy finish.
Winemaker's Notes: An elegant blend of the finest parcels of Pinot Noir and Pinot Meunier. The grapes were whole bunch pressed and cool fermented to retain their natural aromas and freshness. Following this, the wine underwent malolactic fermentation to both soften the acidity and add complexity, after which it was bottled where it underwent secondary fermentation. The wine was aged for over 5 years and then disgorged and aged for a further 6 months on cork, before being released.
