Tasting Notes: Pale lemon green in colour with a lively mousse that quickly settles to a steady stream of fine bubbles. Aromas are a combination of apples, citrus and freshly baked bread. On the palate, this wine shows great vivacity, complexity and a fine mousse. Serve at 8 degrees.
Winemaker's Notes: All grapes were whole bunch pressed and cool fermented separately. Only the free run juice was used for this sparkling resulting in a clean, crisp, delicate wine. A small part of the overall blend was both fermented and aged in oak to further the complexity and mouthfeel. The wine was blended and secondary fermentation took place in bottle. The bottles were then aged for a minimum of 5 years after which the bottles were disgorged and aged for a further 6 months on cork.
