Tasting Notes: This opulent blend of 60% Pinot Noir and 40% Chardonnay displays wondeful aromas of citrus, candied apple and buttery pastry on the nose. On the palate, flavours of lemon shortbread and crème pâtissière combine to create a deliciously complex sparkling that is ideal for celebratory special occasions.
Winemaker’s Notes: Made from the best parcels of Pinot noir and Chardonnay from 2014. Whole bunch pressed and cool fermented in stainless steel. The base blend was bottled where it underwent secondary fermentation in bottle April 2015. This Classic blend was then aged on the yeast lees for over 8 and a half years before being disgorged. Dosage kept low to showcase the fantastic natural balance of fruit and rich breadiness.
