Tasting notes: This wine is pale lemon in colour, with a gentle stream of small, fine bubbles. The aroma is rich and enticing, showing apple, pear and buttery pastry. The gentle mousse leads to delicate apple and citrus flavours, wonderfully balanced and racy. An elegant bubbly showing great finesse, a wine for a special occasion. Serve at 8 degrees.
Bottles Produced: 2000. A vintage wine for Knightor is made only in the best years from the best grapes. Therefore, only a limited number of bottles are produced.
Winemaker’s notes: The stars of harvest: Pinot Blanc and Chardonnay, only the ripest bunches were selected for separate fermentation. With particular attention on pressing, only the finest quality free run juice made the final blend. No malolactic fermentation took place, as the wines already displayed great balance. The two wines were blended in August 2012, tirage added and then bottled on 28th of September 2012. Following a long, cool fermentation in bottle, we aged this wine for three years on lees. The wine was disgorged and aged for a further year before release late in 2015.
