Carpe Diem White
Grape variety: Huxelrebe, Bacchus, Reichensteiner, Chardonnay
Tasting notes: It is typically English in style, displaying delicate fresh fruit and floral hedgerow characters on the nose. It displays great balance with a medium fruit intensity of medlars, white plums and fresh grapes that express the perfect ripeness. On the palate it is fresh and well rounded giving generous apple and citrus flavours.
Food Pairing: Carpe Diem white is designed as a fresh, easy drinking wine that can pair perfectly with a wide array of different foods. Our favourite pairing is with a quick green pesto pasta, lots of herbs and topped with a fillet of fresh white fish. Serve at 10 degrees celsius.
Winemaker’s notes: All grapes were picked by hand and fermented cool, predominantly in stainless steel tanks to preserve freshness and fruit characters. A small percentage of the wines are fermented in barrel to add depth and roundness to the palate. After fermentation, we frequently stir the lees, providing further smoothness and mouthfeel.
