On the nose, this wine shows restrained apple, citrus and floral characters, with just a touch of buttery pastry. The palate is elegant, vibrant and intense, with a wonderful lasting mousse. There are mouthwatering lemon, lime and apple flavours, as well as a suggestion of something more savoury and rich. A delicate, long lasting finish. A wine to savour every sip.
Blanc de blancs tend to be the leanest and most delicate style of sparkling wine. With youth, they can be quite lean and sometimes aggressive but if given sufficient ageing, they can soften to unrivalled elegance. It was noted very early on that this small batch of Chardonnay had incredible potential, it was wonderfully ripe with good fruit flavours but it had also retained that characteristic acidity required to help it age.
