Vinification: The Bacchus was harvested by hand in good clean condition. This was pressed and fermented cool in stainless steel tank. It was aged for a short period after fermentation and bottled in the spring of 2020.
Winemaker’s notes:
The autumn of 2019 was cooler than the previous years, 2018. This resulted in Bacchus grapes that retained higher acidity levels and lighter body. However it seems often in the cooler year the aromas of the Bacchus grape seem to flourish and become even more pronounced.
