Grape variety: Chardonnay, Reichensteiner, Huxelrebe, Auxerrois, Pinot Noir, Pinot Meunier
Tasting notes: Lemon green in appearance, with a fine continuous stream of bubbles. On the nose, this wine shows green apple aromas along with bready, nutty characters associated with the bottle lees ageing. The palate is dryer in style to allow the natural fruit and savoury characters to come through. Flavours start sweet and fruit forward with fresh apple and lemon rind characters and develop into savoury, biscuit and nuttiness. A long, interesting finish.
Food pairing: A classic combination with oysters. Serve at 8 degrees.
Winemaker’s notes: This is a very similar blend to that used in our Classic Cuvée sparkling wine but the significant portion of 2009 Chardonnay lends itself to being a leaner, more complex wine. A long way in the making, each varietal was whole bunch pressed and fermented separately at a cool temperature. After a minimum of 10 months ageing in tank, the 9112 blend was created using 2012 base wines, reserve wines from 2011 and Chardonnay from 2009. A tirage was added and the blend was bottled in September 2013. After the secondary fermentation had completed, the wine was aged for over 18 months before being disgorged. Following disgorgement, the wines have been aged for a further 6 to 12 months to aid integration.
