Pinot Noir Rosé 2021
A favourite in Source Kitchen, St Ives...
Wine: Still Rosé
Grape Variety: Pinot Noir
Character: Delicate and crisp
Aromas: Strawberry, rose petal and vanilla
Flavours: Delicate red fruits and cream
Style: Similar in style to a Sancerre or Provence Rosé
Food Pairing: The perfect aperitif or alternatively the perfect alternative to a crisp white
Winemakers notes: 2021 was a challenging year for grapes, with a cool and relatively damp autumn. This rosé was crushed and cold soaked on the skins for 24 hours to extract colour and body. The grapes were then pressed 45% fermented in american and french oak barrels, the remainder in stainless steel tank. The wine was then aged for a further 10 months in barrels and tank before being blended and bottled.
Tasting notes: Pale salmon in colour, aromas are subtle combination of sweet vanilla and delicate red fruits. The palate is dry starting with crisp citrus flavours followed by gentle red fruits. Perfect with salads, fish and white meats.
