Vinification: The top parcels of Chardonnay and Pinot Noir were whole bunch pressed and cool fermented separately. After fermentation the wines underwent malolactic fermentation to soften the acidity and add creamy complexity. The wines were blended, aged for short period before being bottled in May 2014. Tirage was added and the bottles underwent secondary fermentation in bottle, following this the bottles were aged for a minimum of 4 and a half years before being disgorged and aged for a further 6 months on cork.

Winemaker’s notes: The best of the best from 2013. Grapes were selected from the finest parcels of Pinot Noir and Chardonnay, completely un-oaked, this wine displays incredible depth, freshness and purity. On the nose it shows savoury biscuity shortbread characters reflecting the ageing, plus incredible intense fresh citrus and apple characters. This is a brut level sparkling showing a fine balance between richer more savoury biscuit, toasted almonds characters along with crisp fresh citrus and green apple. The mousse is soft and the finish long and persistent. The perfect toasting celebratory drink.
