Tasting Notes: A very pale copper salmon hue with a fine stream of tiny bubbles. The nose shows incredible delicate complexity. Aromas of raspberry, lemon zest and buttery almond biscuits. The palate is crisp, with fresh citrus and raspberry flavours that linger providing a long finish.   

Winemaker's Notes: One of the highlights of the 2013 vintage were the Pinot Noir and Pinot Meunier. These were whole bunch pressed and cool fermented to retain the natural aromas and freshness. Following this the wine underwent malolactic fermentation to both soften the acidity and add complexity. The wine was bottled in the Spring of 2014 where it underwent secondary fermentation in bottle. The wine was aged for over 4 and a half years after which it was disgorged and aged for a further year on cork, before being released.
